A delicious and healthy breakfast.
Peppers are my favourite vegetable because you can add them to everything. They have great flavour and you can put anything in them. In this recipe the peppers are stuffed with egg, turkey bacon & cheese. It’s very easy to make, but just takes a while to bake.
The most important part of a healthy diet is eating plenty of vegetables. This recipe will give you enough vegetables and protein to start your day off on the right foot.

Time: 40 minutes
Ingredients
1 pepper
2 eggs
1/2 cup cheddar cheese, shredded
2 slices turkey bacon, cut into bite-sized pieces
oregano, salt and pepper for seasoning
1/4 Avocado, chopped
Salsa and sour cream (or plain greek yogurt)
Instructions
Cut the pepper in half and take out the seeds.
Bake for 20 minutes at 350.
Take the pepper out and add cheese, turkey bacon and one egg to each half.
Season with oregano, salt & pepper.
Bake for another 20 minutes.
Serve with avocado, salsa and sour cream (I usually use plain greek yogurt).
