Breakfast for champions!
This stuffed sweet potato breakfast recipe is all you need in order to set your day off on the right foot. Sweet potatoes are wonderful because they provide carbs for energy, they also provide fibre (my fav), and an absurd amount of vitamin A.
Vitamin A is absolutely crucial for vision and immune function. Vitamin A is also an antioxidant that protects your body’s cells.
Using eggs also provides a good source of protein for your day. I always recommend including protein with all of your snacks and meals because it helps maintain your muscle mass and it’ll help you reach your protein requirements for the day without even really thinking about it!
In the video I baked my sweet potato, but that’s only because I don’t have a microwave (long story, I don’t wanna talk about it…). However, if you do have a microwave,] I definitely recommend using that because it speeds up the entire process.
